This is an example of a recipe that can be used for many different types of meals throughout the week, and the best part is, it requires NO COOKING!
It uses rotisserie chicken (pre-cooked) that you can get at almost any grocery store to make it even more convenient.
I personally prefer mine to be a little spicy, but if you don’t like spice you can either leave out the chipotle peppers all together, or tone down the amount you put in.
I love putting these on a wrap with some salad mix and salad dressing for an easy lunch, or using it as a dip with some crackers and/or vegetables for an easy snack that contains protein.

Ingredients:
1 rotisserie chicken (shredded)
1 & 1/2 cups plain Greek yogurt (non-fat)
1/2 cup black beans (low-sodium)
1/2 cup kernel corn (low-sodium)
1 green bell pepper (diced)
2 tomatoes (diced)
3 celery stalks (diced)
3-4 green onions (chopped)
1-4 chipotles in Adobo sauce (chopped, optional depending on spice preference)
juice of 1-2 limes
Homemade Taco Seasoning:
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon dried oregano
salt and pepper to taste
Directions:
In a large mixing bowl, place the rotisserie chicken and shred with two forks or a hand mixer.
Add the yogurt and vegetables and mix.
Add the lime juice and seasonings and mix until evenly combined.
