Better-Than-Caesar Salad

I am the first to admit I usually don’t love salads. However, I do really love a chicken caesar wrap. Caesar dressing in particular can be a challenge to fit into your macro targets as it typically contains a little higher fat content.

This version of caesar dressing is significantly lower in fat than most, allowing this to be a very macro-friendly version of the classic salad. The dressing itself is actually vegan, and is a slightly lighter, and better version (in my biased opinion) than the traditional version.

To save time, I roasted chickpeas in the air fryer for a higher protein replacement for croutons, but store-bought or oven roasted works just as well! If you LOVE croutons, keep them! There is nothing wrong with croutons, I just prefer the crunchy chickpeas.

TIP:

If you are in need of more carbohydrates for this particular meal, simply add your salad mixture to a wrap!

Ingredients:

1 head of romaine lettuce, chopped

4 slices cooked turkey bacon, chopped

1000 grams cooked chicken breast, chopped

1 can chickpeas (125 mL)

1-2 teaspoons garlic & herb seasoning (optional)

Salt & pepper to taste

Vegan ‘Caesar’ Dressing:

1/4 cup tahini

1 lemon, zest and juice

2 teaspoons capers, drained

1 tablespoon nutritional yeast

1 tablespoon dijon mustard

1 tablespoon olive/avocado oil

1 tablespoon garlic paste (or 1 garlic clove, minced)

1/4 cup water

Salt and pepper to taste

Directions:

In a small bowl or in the apparatus your blender uses, add all the ingredients for the dressing. Blend until smooth and set aside.

If you have an air fryer, add your chickpeas, coat with avocado/olive oil spray, salt, pepper, and any additional seasonings you prefer. For this recipe I used a garlic & herb blend.

Cook on 400 degrees in an air fryer for 15-20 minutes until your desired ‘crispiness’, taking them out to shake them halfway through. I prefer mine pretty crispy, so I usually go closer to 18-20 minutes.

If you have an oven, use the same seasoning blend, it may take 5-15 minutes longer in the oven compared to an air fryer depending on your oven.

Add 3/4 of the dressing to the romaine lettuce and toss until evenly coated. Add the chopped chicken, turkey bacon, and chickpeas to the mixture with the remainder of the dressing and toss.
